{"id":1265,"date":"2019-05-05T12:54:19","date_gmt":"2019-05-05T17:54:19","guid":{"rendered":"http:\/\/madstone.net\/?p=1265"},"modified":"2021-01-17T11:29:05","modified_gmt":"2021-01-17T16:29:05","slug":"fruit-and-nut-oatmeal-bars","status":"publish","type":"post","link":"https:\/\/madstone.net\/?p=1265","title":{"rendered":"Fruit and nut oatmeal bars"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"787\" height=\"755\" src=\"http:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-1.jpg\" alt=\"\" class=\"wp-image-1269\" srcset=\"https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-1.jpg 787w, https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-1-300x288.jpg 300w, https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-1-768x737.jpg 768w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 984px) 61vw, (max-width: 1362px) 45vw, 600px\" \/><\/figure>\n\n\n\n<p>I made these today and I am almost certain that I&#8217;ll want them again, so I&#8217;m writing up my notes before I forget what I did. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2.5 cups all-purpose flour<\/li><li>1 teaspoon (tsp) baking soda<\/li><li>1 tsp salt<\/li><li>Half cup sugar<\/li><li>Three fourths cup of old-fashion oatmeal (retain for later)<\/li><li>Half cup of honey (or skip the sugar and use a full cup of honey)<\/li><li>2 eggs<\/li><li>2\/3 cup canola oil<\/li><li> 1 teaspoon vanilla<\/li><li>1 tsp salt<\/li><li>Good dash or two of cinnamon<\/li><li>One and a half cups of cooked steel cut or pinhead oatmeal<\/li><li>Half cup chopped walnuts (or preferred nuts)<\/li><li>Half cup raisins (or other dry fruit)<\/li><li>Half cup chopped prunes (optional)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"> Instructions<\/h2>\n\n\n\n<p>Cook the steel cut oats as per the instructions. While the oats are simmering, you can work on the rest of the recipe. I found that I had to let the oats sit a bit to absorb excess water; you may want to try reducing the amount of water a bit from what the instructions say. I&#8217;m very much a newbie in the kitchen, so if you&#8217;re a quick worker, you may want to start the oats a bit earlier so that they&#8217;re ready when you need them.<\/p>\n\n\n\n<p>In a medium bowl, mix the flour, sugar, baking soda, and salt.<\/p>\n\n\n\n<p>Measure a half cup each of nuts and raisins; chop prunes to make a half cup. Set aside for a moment.<\/p>\n\n\n\n<p>In a larger bowl, mix the eggs, oil, cooked oatmeal, honey, and vanilla. Set aside.<\/p>\n\n\n\n<p>Gradually add the dry mixed ingredients to the larger bowl, stirring well to blend them with the wet ingredients. <\/p>\n\n\n\n<p>Preheat the oven to 350 degrees.<br \/><\/p>\n\n\n\n<p>Once your batter is smooth and well mixed, fold in the fruit and nut mixture. <\/p>\n\n\n\n<p>Add small amounts of the dry old-fashioned oats to the mix until it reaches a firmer consistency; it will flow all over the cookie sheet otherwise.<\/p>\n\n\n\n<p>Prepare your cookie sheet as you normally would (we use parchment paper, which makes this super easy), if you&#8217;re planning to turn any of the batter into cookies. I made a dozen medium cookies and still had plenty of batter for the bars I was aiming for.<\/p>\n\n\n\n<p>Use a tablespoon or medium cookie scoop to portion out the batter onto a cookie sheet (9-12 cookies per sheet). Bake for about 13 minutes, or until the cookies start to firm up and begin to brown.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"911\" height=\"706\" src=\"http:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-3.jpg\" alt=\"\" class=\"wp-image-1270\" srcset=\"https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-3.jpg 911w, https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-3-300x232.jpg 300w, https:\/\/madstone.net\/blog\/wp-content\/uploads\/2019\/05\/oat-bars-3-768x595.jpg 768w\" sizes=\"auto, (max-width: 709px) 85vw, (max-width: 909px) 67vw, (max-width: 1362px) 62vw, 840px\" \/><\/figure>\n\n\n\n<p>While the cookies are in the oven, pour the rest of the batter into a 9-inch round or square baking pan. When the cookies are done, take them out and put the baking pan into the oven. Cook the bars for 35 minutes or until a toothpick comes out of the center dry. <\/p>\n\n\n\n<p>Transfer the cookies to a wire rack to cool. Store them in an airtight container, or freeze for later. <\/p>\n\n\n\n<p>When the bars are cooked, cool the entire cake for at least 20 minutes before cutting into bars.
